Mix vegetable Uttappam



Uttapam is a very popular South Indian breakfast dish.  

It is similar to dosa but slightly thicker than the regular dosas. It can be made with leftover idli dosa batter. 

Vegetable Uttapam can be served for breakfast or as a snack. Uttapam can be made with a variety of toppings like onion, tomato, coconut, and many others. Vegetable Uttapams are topped with finely chopped vegetables. You can make use of vegetables like carrots, capsicum, onion, and cabbage. They can be easily prepared at home and served with coconut chutney and sambar. All you need is some dosa batter and mixture of vegetables for making Vegetable Uttapam.
Ingredients:
  • 4 cup Idli Dosa batter
  • Onion , finely chopped
  • 1/2 Green Bell Pepper (Capsicum) , finely chopped
  • Tomato , 1 tomato finely chopped and de-seeded 
  • Green chillies , finely chopped
  • 2 tablespoons Coriander leaves (dhania) , finely chopped
  • 1/2 teaspoon Red chilli powder
  • MTR Podi Masala (Optional)
  • 1/2 teaspoon chat masala
  • 1/4 teaspoon Garam masala
  • Salt to taste
  • Cooking oil , for greasing the pan
Process:
  1. To begin the preparation of Vegetable Uttapam, take the dosa batter in a bowl, add water if required to get the desired consistency. 
  2. Finely chop all the vegetables and keep aside. 
  3. Heat a non-stick tawa. Grease it with oil. 
  4. When the tawa becomes hot, pour one ladleful of batter and spread it in circular motion, don't make it too thin
  5. You will find small holes appearing on the surface, add the chopped vegetables.  Drizzle oil around the edges and at the center
  6. Reduce the flame to medium.  Cover and cook on medium flame for a few seconds
  7. By this time the veggies would have cooked. Sprinkle some podi masala and Gently press it with the back of a spatula
  8. Flip the uttappam to the other side and cook on medium flame for 1 - 2 minutes
  9.   Transfer the uttappam to a serving plate and Garnish with grated cheese(Optional) and serve with chutney of your choice or saambar

South Indian Idli style Gujrati Khaman Dhokla


Ingredients:

  • Besan (Gram flour) - 200 gms
  • Curd half cup
  • Turmeric - 1/2 teaspoon
  • Ginger and green chili paste -  1 teaspoon
  • Eno fruit salt
  • Water 1/4th cup
  • For Tadka - Mustard seeds, Cumin seeds, Curry leaves, Sugar, Green Chilies
  • Oil 2 table spoon
  • Corriander leaves for garnishing
  • Salt to taste
Process:
  1. Mix Besan, Curd, water, salt, ginger and green chili paste and oil in a mixing bowl and whisk well
  2. Grease the idli stand and boil the water in the steamer
  3. Put 1 teaspoon of eno fruit salt in the batter and pour 2 table spoon water over eno to activate it
  4. Pour the batter in the idli stands and place the stand in the steamer
  5. For tadka heat 2 table spoon of oil and put mustard seeds, cumin seeds, curry leaves and green chillis in the oil and once it starts making popping sounds put half cup water in the tadka and add 1 teaspoon of sugar in the tadka
  6. let the tadka boil for 1 minute and then keep it aside and let it cool
  7. After 20 minutes take out the dhokla from the steamer
  8. Once the dhokla is cooled down take it out from the idli stand and place it in a plate and pour the tadka over the dhokla
  9. Garnish with coriander leaves

Dates and Walnut Tea Cake





Saturday evening craving for something sweet…. Perfect for your sweet tooth Dates and walnut tea cake… Try it… You gonna love it
Ingredients:
  • 1 cup Maida (All purpose flour)
  • 2 eggs
  • Vanilla Essence 1 Teaspoon
  • 4 Tablespoon sugar (Or as per your taste)
  • 1/2 Cup Milk
  • 2 Tablespoon butter
  • 1 cup deseeded dates(Khajur)
  • 2 tablespoon crushed walnuts
  • 1/2 teaspoon Cinnamon
  • 1 teaspoon Baking powder
  • 1/2 teaspoon baking soda
  • Chocolate syrup for garnishing
Process:
  1. Mix all dry ingredients(Maida, baking powder, baking soda, sugar, and cinnamon) in a mixing bowl
  2. Add milk and 2 eggs and whisk well so that there are no lumps
  3. Add butter, vanilla essence and mix well to a thick batter consistency
  4. Add dates and walnuts to the batter and fold lightly into the batter
  5. Preheat the oven at 180 degree
  6. Grease the cake mould and dust little flour over it so that the cake comes out without sticking to the mould
  7. Pour the batter into the mould and place it in the oven and bake for 15 minutes at 180 degree
  8. Then again bake for 5 minutes at 220 degrees to give the crust a brown and crispy if you want to keep the crust soft bake 20 minutes at 180 degree
  9. Give it a rest time of 5 minutes after baking is done
  10. Once it is cool de-mould the cake and cut into desired pieces
  11. Enjoy with tea/coffee in morning or evening
