Aaloo Pyaaj ki Kachori (Famous Rajasthani Snacks)

Rajasthan.... What comes to mind when we talk about the beautiful, colourful state of Rajasthan? Historic forts, palaces, dessert and most importantly the delicious, homely wholesome tasty food.

What can i say about amazing Rajasthani food, you have Onion Kachoris and Makhaniya lassi of Jodhpur, tangy samosas and Dal Dhoklas from Jaipur, Alwar ka Milk cake, Mirchi wada or Ajmeri kalakand from Ajmer, Humongous Thalis across Rajasthan, Dal baati and Pickles. Rajasthan has lots of amazing delicacies which are now famous across India. Rajasthani Maarwari community has spread across the country and you can always find atleast one delicious Rajasthani Sweet shop in your neighbourhood.

Let's make Famous aaloo pyaaj kachori to bring the taste of maarwaar to our own homes.Note down the Ingredients.

Ingredients 

For spice mix

  • 1 teaspoon Jeera
  • 1 teaspoon Coriander seeds
  • 1 teaspoon Kasoori methi
  • 1 teaspoon Sauf (Fennel seeds) 

For the filling 

  • 2 medium sized Boiled potatoes mashed 
  • 1 Onion finely chopped and 1 onion sliced
  • 2 Tbsp oil for sautéing the filling 
  • One pinch of hing (asafoetida) 
  • 2-3 garlic cloves
  • Besan 3 tbsp
  • 1 teaspoon redchilli powder
  • 1 teaspoon Amchoor
  • 1/2 teaspoon black salt
  • 1/2 teaspoon garam masala 
  • 2 green chillies finely chopped 
  • 1 teaspoon sugar 

For the dough 

  • 2 cups of maida (All purpose flour) 
  • Pinch of Ajwain (Not more) 
  • Salt as per taste 
  • 2 table spoons of ghee
  • Water to knead a soft dough 
  • Oil for deep frying 








Process 

  • Dry roast all the spices for spice mox on a pan on medium heat so the aeoma comes out 
  • Grind the mix to a coarse powder 
  • Take 2 tbsp oil in a frying pan
  • Put the spice mix in the oil when it is at warm stage
  • Add pinch of hing and mix well
  • Now add besan, and remaining dry spices and mix well
  • Add onions and sautee well
  • Once onions anmre soft add mashed potatoes and mix well
  • Lastly add green chillies and sugar and mix well till the filling is cooked well
  • Now let it cool till we make our dough 
  • Take 2 cups of maida, add salt, ajwain and 2 table spoon of ghee and mix well by rubbing the ghee and maida together till ghee gets combined with the flour well
  • Now slowly and gradually add water and knead a soft dough and keep aside for 15 minutes 
  • Make small balls from the filling mixture 
  • Divide the dough into lemon sized balls 
  • Press and flatten the dough balls and put the filling balls inside and start covering the filling ball with the dough till done like a ball from all sides
  • Now press and flatten the filled dough between your palms
  • Repeat the process for remaining dough and filling 
  • Now heat the oil till medium hot
  • Now start putting the Kachoris in the warm oil one by one and let it fry on a medium flame till golden crispy in color 
  • Take them out and let it cool for 5-10 minutes 
  • Your Crispy Tasty Aaloo pyaaz kachoris are ready to serve
  • Serve it with Tamrind and Mint chutney, Also you can make a kachori chaat with it by pressing from center, pouring Tamrind and mint chutneys and topping off with curd and sev and some more chopped onions and coriander.
